networking...only specific folders for sharing. how?

Thanks to edesignuk's networking thread (http://forums.macrumors.com/showthread.php?t=54704&highlight=mac+pc+networking) everything is working great.

All I want to do is to restrict the access to certain folders (on my Mac) and I can't figure out how.

Any help is appreciated.
