Is there a good substitute for this application on the Mac? I can't seem to find one.

Try FastTrack Schedule 8 (http://www.aecsoft.com/products/desktop/fasttrack/Default.asp?bhcp=1)

Very good and compatible with Project ( I myself dare say it's better)
