Is there any way to do that in OS X? Or even mute an application? I tend to play flash games online when I get bored, and the last thing I want to do is hear their obnoxious sounds blasting over my iTunes.

I don't think you can do this. There may be 3rd party applications avaliable though.

just found this post in google, as i was looking to do the same thing... here's what i found:
Detour: http://www.versiontracker.com/dyn/moreinfo/macosx/20128 - allows per application volume control/mute/audio out destination... and it's free!

Does Rosetta not handle it properly? Theoretically, Rosetta should at least allow the program to run. Whether or not it could properly access the hardware (presumably) and route the audio is a different story, but it should at least run...

Rosetta doesn't work for System Preferences items. You just get a message saying contact the author for a newer version.

Airfoil will allow you to listen to iTunes only
You cannot listen to several apps at the same time, if I'm not mistaken.
Yes, I know it's not free.
