I would like to get rid of some of the printer drivers and language files, how would I do this?

To remove langugae files you can use Monolingual (http://monolingual.sourceforge.net/) do not remove any architectures which are checked by default
To remove printer drivers you can delete them from /Library/Printers/

And if you do reinstall, scope out the bottom left hand corner of the primary install dialog for when "Custom ... " or something similar to change the default install options, which will bring up a nice form for unchecking the junk you don't need.
