Change Default Program

I have Acrobat Reader as the default for ALL the PDFs that I wish to open...Now...how can i change the default program to Preview...not just for one file, but for all of them.

find a pdf, highlight it, hit apple-i to get info.

there's an area called "Open with" where you can pick the app you want. the "Change All..." button is in there.
