possible dumb quewstion by relative newbie about iLife '04

Here goes.

I'm in Japan, and obviously with Mac OS I have no problems as it's multilingual. But I know that other software applicaions are made to suit the country/language.

Seeing as iMovie, iTunes etc come with the OS, am I right in assuming they'll be multilingual? I hope so as Garageband looks very interesting. But not if it's in Japanese!

And if gives me another excuse to go down to the new Mac shop in ginza:D

Most Apple programs contain multiple language resources. The OS (well the application runtime environment anyway) will automatically use the resources that match your current OS language if available. To see what languages a given program has available select it in your Applications folder and do a Get Info (Cmd I). There should be a section on languages. You can even turn off languages for a given Application here (and maybe re-order your preferences to start some apps in another language).
