File Helpers/Helper Applications

Help please! :) Can someone tell me how to change the File Helpers/Helper Applications in OS X? I could do it fine in 9, but I can't figure out how to do it in X! :( Specifically the file helpers for files I DL with Safari. I've been trying to play some streaming WMP clips in Safari and they keep opening in VLC instead of Windows Media Player. :( How can I tell Safari to open them in WMP?

How can I change the default application for each MIME type? Where do I modify it?
