How to change the default file type association.

Like I would like double click the .txt file, then bbedit is
fired up, instead of the texteditor.

Select a file of this type in Finder, then get info (from File menu or command-I). Click on the 'Open with:' arrow, and in the menu in this pane select the preferred application (eg BBEdit). Then click on the 'Change All...' button and click Continue in the resulting dialog.
