I have Windows 7 running on a separate disk on my Mac Pro.
A Bootcamp drive and System Reserved drive mount in OSX.
Fusion fails to preprocess the bootcamp partion... and it fails to start.
Any suggestions on how to get this working?

And it boots OK natively into Windows if you restart using the BootCamp drive?

Correct. I wonder if it's the fact that when you install Windows 7 on a stand-alone drive, it creates a 100MB "System Reserved" partition (normally hidden I believe) that is used to start the OS, along with the normal partition that is your C drive with the Windows directory etc. Perhaps Fusion is not able to support this partitioning scheme that Win 7 creates?

Any news/solutions on this?
I'm in the same boat! preprocessing fails and Windows always goes to the startup recovery menu when trying to boot via VMWare fusion! :(
