The Mail app supports any email service that has POP3/IMAP mail servers.
But, it will also support hotmail via a 3rd party plugin called HTTPMail (I think) - www.versiontracker.com

ThankxMail.app supports standard email protocols like POP3 and IMAP and the proprietary Microsoft Exchange and Apple's own .mac. IIRC, Hotmail requires special plug-in.

Google to the rescue! I found this tutorial (http://core.ecu.edu/music/dixonm/tutorials/OSXmail.htm) on the subject, but it's specific to ECU. Surely you could substitute the relevant settings for your environment?

I used to have an exchange server at work and when I set up Mail for that account it created a bunch of folders. I imagine whatever is on the server gets copied over. This was automatic, btw--no configuration.
