I got this book for my brother when he first started using a mac. It'll walk you through all the applications in OS X, and a lot more. It was called:

The Little Mac iApps Book
by John Tollet with Robin Williams (not the actor obviously :p)

Hope this helps!

Second that. I found it to be the best.

I third the recommendation of The Missing Manual: Panther Edition. I wouldn't normally spend $30 on a book to learn how to use a computer, but decided to pick this up after looking through it at the bookstore. I knew how to use OS X before I got it, but by reading through it, I've learned tons of little things that have made my work on the Mac easier, and more fun.
