So I just bought an itunes card at a Metro grocery store here in Canada. After I paid for it the lady told me I had to wait 24 hours before I could redeem it and that was the way it is now with itunes cards. Also on the receipt it says if I try to redeem it before 24 hours that it would invalidate the card.
Is that true? Is this the new policy for itunes cards? I have bought lots before and never had to wait to use them!

I too have purchased iTunes cards recently and was able to use them as soon as I got home. That was within 30 minutes.
 
What the OP is describing is probably something particular to the retailer and not to iTunes cards as a whole. Not all retailers activate cards immediately after purchase - it depends on the retailer's policies.

Sounds like the store is implementing some changes to thwart fraud or something.

Yeah I think it must be retailer specific. I'm not gonna chance it and will wait until later today!
