It's only $259.99 w/ free shipping.
I ask not to upgrade the quad core but am wondering if I go w/ a quad core Mac Pro now, if I'd be able to swap out a quad core processor with the 6-core processor in a year or so (hopefully the price would be similar and I wouldn't have to spend $1080 to upgrade it today).

Yes but you would have to change your RAM to non-ECC RAM

Depends which you get. If you buy the i7-980X, then you have to change your RAM because it does not support ECC RAM but if you get Xeon W3680, then you can use the RAM you already have in there

What would be your guess on the price of a 6 core processor upgrade a year from today?

There is i7-990X coming soon and maybe W3690 as well so the 3.33GHz will likely drop to somewhere around 800$. Hard to say what is the price after a year because there should be more CPUs around by then
