I'm planning on buying 3 new ipod touch
and I know apple give discount when I give them old ipods
do I need 3 old ipods? or can i just give them one and get 10% off entire order?

If you'll even be allowed to buy 3 iPod touches simultaneously, the 10% discount is only for one of them.

Seems pretty clear to me. One old iPod for 10% off a new iPod.

They mention old mobile phones as well, but I've heard that you can't trade those in for a 10% discount (supposedly only old iPods). Is that right?

Just the iPod.
I traded in an old iPod about an hour ago on a new Touch. I took the iPod without any accessories and got the 10% off.
The old iPod I took in was a 3rd gen (the one with the row of four buttons). The woman at the store was quite excited to see an iPod of that vintage. :D She wanted to buy it from me until I told her it no longer worked.
