However, each time you plug your iPod into a different Windows or Mac computer, the songs on the iPod will be overwritten by whatever songs are in the iTunes library on the new computer.

That's only if you want to change the library association- if you don't (by clicking "no") then you can play music directly from the ipod on the other computer (ipod preferences must be set to manual). Of course you can just use the ipod as an external hard drive and not open itunes on the other computer, that works fine too. You cannot, however, have more than one itunes library on the ipod.
