Here's the setup:

Desktop mac upstairs, with Airport Extreme - contains iTunes library
Notebook mac downstairs with Airport Exteme
Airport Express downstairs, hooked to stereo

My first instinct is to share the iTunes Library from the desktop to the notebook, and then send the music from the notebook to the Airport Express.
But that doesn't seem very elegant, and I'm wondering if the sound might get choppy.

Is there an easy way to control iTunes on the desktop from the notebook?

Just share the library on the Desktop.
iTunes-preferences/Sharing
share all or just one or more Playlists.
