Well they did replace the entire PowerBook line with a form factor change shortly after a speed bump.
And everyone "says" Apple is going to replace the eMac -- and they just finished a major architecture overhaul on it in April (ie, the type of overhaul that generally comes with a new form factor.) Something that generally doesn't get touched by anything but speed bumps for 18-24 months.
Only reason they changed the form factor and materials from Ti to Al was because there were way too many problems with Ti plus they added the 12" and 17" to the line the 15" looked out of place so they made the change to keep the lines in order can you imagine building the 12 and 17" PB line with Al and 15" with Ti that is not cost effective.
Depends what you call new form factor since the iBook white has been using this form factor for quite sometime and I see it as nearly perfect not sure how they are going to improve on this form factor looks quite good and unique at present compared to the x86 notebook line. Some would say the 15" getting the Al casing was a hiccup in the product line revision cycle the Ti though looked good seems to be a bad dream for reasons that I am not going to mention.

As far as the G5s, it all depends on IBM getting their act together.
But it also looks like the 970FX will be ending it's life in the PowerMac without a speed bump -- unless something bad happens with IBM production on the successor chips and Apple is forced to bump the duals to 2.0/2.3/2.5 GHz 970FXs.
The iMac G5 and XServe G5 might squeeze out a singe speed bump to 2.3GHz 970FX CPUs before moving on -- "if" the PowerMacs have a new CPU to move to.
IBM has already been producing low powered G5 chips or as the rumours go and are expected to be in used by Q1 2005.
The Xserve will see an update to 2.3 or maybe even 2.5Ghz however that depends on these new low power chips if they are in mass production.
The eMac G5 might be going to be released soon however will not happen in Jan 2005 since it would step on the iMac G5 toes even though it has been done in the past there is no real compelling reason for Apple to move the eMac yet to a G5 until the iMac G5 sees a bump with some speed difference between the 2 lines, plus considering IBM has ample supple of 1.6GHz or 1.8Ghz in stock.
The eMac did jump in a few months to jump to a G5 in Jan would be too quick of a jump.
This Expo will focused on the Power line portable, desktop, and server end along with iPod and mini in the mix.
As usual Apple will squeeze as much out of the aging hardware as possible. As long as "Tiger" is not released they have no real reason for current hardware to support it 100% until after "Tiger" is released since all Apple hardware currently sold is Panther and previous supported and that is how Apple works. The iMac G5 was and still is supposed to succeed on the "Halo Effect" of the iPod and mini nothing more or less.
