I'm not a big fan of the Apple alum keyboad and wondering what other people are using. I want "keys" not "buttons"!
Also, anyone know a good way to get the cd open/close and volume up/down keys to map on a non-Apple keyboard?

Honestly, the Apple aluminum keyboard is the best I've ever used. Nice and low profile, keys are quick and snappy unlike larger keys.
You have other options though. Easiest choice is to try to get your hands on an older Apple keyboard.

Logitech makes Apple keyboards. Here is an example of one:

I have a Tactile Pro for when I need to type.

But it's noisy, so I have a second keyboard connected to my Mac for everyday use. It's an Apple wireless Pro Keyboard.

I admit, I got used to cheap dell keyboards at work, so I ended up using one with my '06 Imac for a few years. I am not a big fan of the aluminum keyboard that came with my Mac Pro. If it were my work computer, I would have a tactile pro keyboard.
