I searched around about this but haven't found a true definitive answer. Currently, I have 6GB (stock) installed in my 8-core machine (with 2 empty slots). Is it alright if I add 4GB sticks in the empty 2 slots, leaving the other 6 with 1GB sticks?

Yep absolutely fine, as long as you use matching sticks (minimum of two) then your fine :)
