According to the iFixit teardown, it is held in place by a screw, and is connected through an emerging industry standard port, so it should be upgradeable.

SSD Hard drive is new term; but they cancel each other out. It's just an SSD. A hard drive means that there are moving parts in it.

isn't there less space in the 11" thus the max configuration is only 128gb due to all the chips on one side? how would 11" users upgrade if 256gb option has chips both sides.?

I'm guessing eventually Apple will switch from an 8x32GB design to a 4x64GB design that would fit on a single side. The 13" would likely get a 512GB SSD option at time time, too.

According to ifixit, they only tear down a 11 inch MBA, how about 13 inch? Will that be upgradeable?

Do it at your own risk. Apple doesn't support it, so if you use it any other way they support it or fix it, then you lose warranty.
