If you're going to do backups at regular intervals (e.g., once a day, once a week, etc) and only want to back up specific sources I recommend using rsyncbackup (http://rsyncbackup.erlang.no/) (though use this VersionTracker link (http://www.versiontracker.com/dyn/moreinfo/macosx/23077) because the download link on the site is for an older version). Once your scripts are set up (very easy to do!) all you have to do is run one command in Terminal.app and voilą -- backup complete. You can even back up specific sources to specific destinations -- iPod, USB jump drive, network location, etc.
