First, download the Xcode software free from Apple's developer site. (You'll need to register as a developer, but this is all free as well).

http://developer.apple.com/

Next, here's some tutorials to get you started.

http://cocoadevcentral.com/

Follow the tutorials in this order:

1) Learn Objective-C
2) Learn Cocoa
3) Learn Cocoa II

Props to Craig Otis, a developer who got me started this same way. I'm in the same boat as you, and this is the info he provided me. It's been working for me thus far.

Enjoy!

edit: Forgot this was in the iPod Touch section..well, the stuff I posted is for Mac apps, but I think the info I provided should still be at least somewhat helpful! I hope..Let me know!

Make sure you visit the Guides and Stickies at the top of this very forum (http://forums.macrumors.com/forumdisplay.php?f=135).

It would help to know your background in programming as well as what you want to do with this.

If you are completely new to programming, I would suggest starting with Kochan's book on Programming in Objective C 2.0 before delving into cocoadevcentral or even the Xcode tutorials. They tend to be written more for folks who already have some background knowledge, while Kochan's book does a really great job (IMHO) of giving you what you need.

If you do have some experience in C or a C-like language, you can probably do OK with cocoadevcentral and its companion book (http://cocoabook.com/).
