Video folders & uncheck for shuffle

I'm wondering if there is a way I can put all my Shakespeare movies in one folder like how tv shows or music vids by same artist are filed? Also is there a master setting for skip while shuffle in iTunes. I'm thinking somehow it's set as default where it's checked so not all my music shuffles? If not can I highlight entire library and uncheck it in info? Thanks

regarding shuffle:

from iTunes, highlight every track that you do not want to include wile in Shuffle mode and go to File> Get Info ( or Mac-Command + I, PC-Right Click + Get Info), then go to the Options Tab and select 'Skip when shuffling'. Once this is done, just sync your device and this should go into affect.
