How much will an Apple Macintosh Performa 575 be worth some day?

Not terribly much, unfortunately. It's a middling system, not particularly impressive in any spec, with a built-in power-hog CRT. The monitor-less Quadra 605 is a heck of a collectors item; but this is just a monstrosity.
It's not a horrible machine for the time, nor even particularly bad now; it's just fairly common as well as large.
I'd estimate it would be worth, at most, $50. Maybe at some point ridiculously far in the future, if you keep it in absolute pristine condition, fully functional (means replacing capacitors at some point,) it might be worth a lot; but we're talking a long ways off, when CRTs are seen as curious antiques, and 68k Macs are as rare as hens' teeth.

Really? We still use it (just for fun). There's some neat programs on it, etc. The printer still works, too. 🙂

Actually, I have a soft spot for the 040 CPU machines. If you want an addictive game for it, try Apeiron.
I loved the Sony Trinitron tube they used, compared to the el-cheapo Performa 580 which used cheaper tubes.
Keep it. I'm keeping mine (about 4 of them). They're good for many color games (of the time). 😀

Basically any time-appropriate game from Ambrosia will be awesome on there. Apeiron is probably the most fun though. A thoroughly modernized Centipede. 😀

I saw a 575 on Craigslist the other day for $20. As others have said, it was a fine machine back in the day, but not very collectable without the original packaging, and in pristine condition.
So hold onto it, play some games, and bask in the nostalgia!

In thirty years, if it still works and you can find some packaging for it (Original is best) - You might get $300 or so for it (Thats what decent nick 20year old rare models go for now, so since yours isnt particularly rare, thats what Id expect its max price to be if it was fully functional at 40something
