What UNIX book would you recommend for OSX to:
Set enviroment variables
Write scripts
explain basics of differnt shells (tcsh, for eample)

Far and away the best OS X book I've seen is called "Mac OS X Unleashed" by J & W Ray

How much of the book deals specifically with Unix? I'm looking to learn some basics and a good book would be just the thing I'm looking for.

The "Unleashed" book looks great.
O'Reilly has "Learning UNIX for Mac OS X" and "Mac OS X for UNIX Developers". Their books are always quite good.

I have the "Learning Unix for Mac OS X" by O'Reilly. It is a well written book, that I purchased mainly out impulse and curiousity. It answers the questions that you ask, but is not a detailed investigation into Unix. What I would recommend would be to go to:
Learning Unix for Mac OS X (http://www.oreilly.com/catalog/lunixmacosx/) and check out the table of contents, and look over the sample chapter.
Then if you need more information, then look into:
Unix in a Nutshell (http://www.oreilly.com/catalog/unixnut3/)
That goes into a lot of detail and is an excellent reference.
