I have a pretty nice av system that I enjoy plugging in my powerbook and listening to itunes off it but I was curious if there was some way that i could convert the digital signal to analog better then the little mini jack. It's not too shabby but I am interested in a way to do it so that it sounds better.

There are quite a few options for external soundcards and DACs. I know that m-audio has quite a few. Maybe you should take a look at their site.
For what it sounds like you are doing, you best option may simply be the Airport Express. It is relatively cheap, and I have heard that it has great sound when hooked up to larger audio systems. Plus no wires! Bonus.
That is my suggestion, hope that helps.

If you have a Powerbook with a PCMCIA slot, the Echo Indigo line
Griffin Powerwave USB $99 stereo RCA only - includes 10W amplifier
Transit $99 stereo in/out
Sonica Theatre $119, supports 7.1 & DTS digital

Those M-Audip gadgets seem quite good, tad expensive though
