I haven't been able to find any benchmarks comparing the 2.8 GHz Intel Core i7 from late 2010 to the new 2.7GHz Quad-Core Intel Core i5 anyone know if it's a worthy upgrade, or mostly insignificant ?

The CPUs bench pretty close to the same.
Late2009 - i7-860 - 5,566
Mid2010 - i7-870 - 6,101
Mid2011 - i5-2500 - 6,469 (This CPU is 3.3GHz, the iMac i5-2500S runs at 2.7GHz.) http://www.cpubenchmark.net/high_end_cpus.html
There are no benches out for the i5-2500S in the iMac yet, which runs at 2.7GHz so the closest for right now is that i5-2500 at 3.3, when you factor in the downclock they probably bench right around the same.
