Use the transfer purchases function.

You can still get your apps back just Download them again in iTunes, it will look like it will charge you, but once you click buy it will say you've already purchased and allow you to get it again. Doesn't work for music and videos tho.

There is a program called PodtoPc and now Podtomac that takes music back off ipods/phones and iPads and puts them back in Itunes.

You have to pay for it $30-$40, but worth it if your music is worth a whole lot more!
You need to sort out album art etc again but it doesn't take too long.

Worth a try if you have your music on your ipad. I think it takes the videos as well now and might possibly be free for your first use.

It has saved me twice a long time ago on my laptop. (long story!!!)

Don't waste your money on some random music recovery program.. I have used Senuti and never had an issue grabbing songs off my iOS devices:

http://www.fadingred.com/senuti/

It's free, fast, and did I mention that it is free?

EDIT: It was free when I started using it.. now there is a trail for 1000 songs.. shouldn't have an issue unless you have more than that. If you do, PM me...
