I am going to be upgrading the RAM in my new mac mini next week, but I wanted to use it before that and install some programs now. I wanted to know if doing that will cause my recently added programs to be deleted if I open the computer and upgrade the RAM later some stuff on it.
 
No, unless you break the machine when you add the memory. You should always back up your data whenever you do any kind of upgrade. Just remember Murphy's Law.
 
nope prgrams are stored in your hard drive, your ram just stores temprary data that is lost each timeyou power down 🙂 so unless ur hard drive gets fried when u upgrade nothing should be lost
