I am a little confused about which 15" model to buy. I don't do gaming, but I do photo and video editing. How huge a difference are there between the two different GPU's? Someone on here said the base model was worthless. I am replacing a 15" Santa Rosa machine that is over four years old, if this helps.

If you aren't doing any gaming then I suggest getting the base 15". Save the money and go for more RAM or an SSD.

The base model CPU will work great for photo editing.
With the money you save, get 8GB of memory, but not from Apple.
That and a SSD next year when prices are lower, will be your best
bang for the buck performance enhancements for your MPB.
