I live in the general area. How long will you be here? A few things off the top of my head:
1. Country Club Plaza (http://www.countryclubplaza.com/) - A shopping area built in the 1920's. If only all shopping centers were built like this. It is the architecture that I'm speaking off, not necessarily the stores, although the Apple Store is there.
2. Union Station (http://www.unionstation.org/index.cfm)
3. Nelson-Atkins Museum (http://www.nelson-atkins.org/)

If you are into Jazz, must visit Jardines and The Blue Room. The Blue Room is especially recommended if you are REALLY into music. The musical knowledge of the average listener there is a dream come true. KC has an impressive tradition, as you may know.
Missouri law says no gambling on the "land" so there are a couple of riverboat casinos on Missouri river that flows by KC. Have no clue how they are but if you like going to a casino, KC is not without one.

Seriously? Town Center? There's nothing too special about Town Center. The apple store is in CC Plaza, but if you miss the apple store there, it's none too special either.
KC is a great place. Without knowing your age or interestes it's difficult to know what to pick. But a few laid back items:
The Phoenix (http://www.google.com/local?hl=en&lr=&client=firefox-a&rls=org.mozilla:en-US:official&q=phoenix&near=Kansas+City,+MO&sa=X&oi=locald&radius=0.0&latlng=39099722,-94578333,12056054627777131387) is a great jazz bar too. I've only been twice, but each time the quality has been outstanding.
Overland Park Arboretum (http://http://www.opprf.org/Arboretum.htm)
Kansas City River Market (http://www.kansascityrivermarket.com/) Farmers market, unique shops and dining.
Brookside (http://www.brooksidekc.org/) is a nice little shopping area with some little boutique shops.
Basically, KC has lots of little uniqueish pockets of activity. The difficult part is finding which area you like.
