I keep read (http://www.anandtech.com/show/4512/the-2011-macbook-air-specs-and-details) that the 2011 MBA has a sandy bridge processor i7 in it. But I thought all the Sandy Bridge processors were quad core. Or are these just last years i5/i7 processors from the MBP line?

These are the newest i5/i7 processors. Sandy Bridge is the newest line, and that's what the Macbook Airs, the Mac Mini, the iMac, and the Macbook Pros have in them.

The i5 and i7 are both physically dual-core in the Macbook Air. However, they both feature hyperthreading technology; this tech essentially allows each core to double-up to be like it is two cores instead (not quite as good as actually having two physical cores, but two hyper threaded cores are still good). So it's a quad-core after hyper threading is taken into account.

It's a great processor (well, all of them are) in the Sandy Bridge line.
