How do I manually enter metadata into Lion's Finder "search box"?

How do I manually enter metadata into Lion's Finder "search box"? For example, if I type "today" in the search-box, the drop down will show the "Dates" heading. If I then click on the dates heading, it will then show a highlighted field for Dates:today. My question is:
1. how do I enter those fields manually from the search box
2. what are the different types of metadata available for searches?
