Do you think it will be easy to pick up an AT&T 64GB white around 2 weeks after release date? Or should I preorder now and hope I don't get too many shipping delays (I'll only be in the States for 4 days 1st week of Nov. and I would like to leave with iPhone in hand😀 )

Get to an Apple or AT&T store bright & early and it should be easy, provided your store of choice has received a delivery the night/day before.
I recall stores being sold out daily into the month of August after the iP4 release. Early bird gets the worm... Or iP4S in this case.
