I currently have a contact with o2 which is up already, but as you have to give 30 days notice when would be the best time to ring them to tell them I want to end my contract and for them to send me a pay as you go micro sim and swap my number over?

And somebody here will correct me if I'm wrong, but I've got a feeling you can't have PAYG with the iPhone? I'm with O2 on a contract, which I think is better value but there are so many different deals and packages it's a minefield getting the right one. I have a smaller data plan, and use bolt ons if I run low in any given month.
 
Phone them on 2302 from your iPhone and they should be able to swop you over without changing the sim.
