A lesson I learned after the my first iPhone update nightmare (the first iPhone update ever):

This one step seems to save a world of headaches. My iPad2 took 24 minutes start to finish. Starting the iPhone 3gs update now.
No, wait, need to restart it first.
One more step, I forgot to mention, stop by the MacRumors forums and see what problems others are having before you make the dive. :)
