I removed all the website data stored in Safari and then I visited around 7 websites (no search engines), when I checked again it showed that 89 websites have stored cookies or other data, when I clicked on details I saw websites I've never seen, visited and I don't recognise. Does anyone know what is going on?

Those are cookies from third party web sites that track ad data primarily.

Go to safari prefs and check block this party cookies as shown in my screen cap and it will stop most of them.
