If the number is listed as 'Mobile' in a persons contact (for example), say "Call [NAME] on Mobile".
It's quite easy; and ask it "What can you do" for help.
 
If, for instance, they're labeled as "home" and "mobile", just tell Siri to "Call <name> <label>."
 
I find that just saying "can you call Sam on her mobile" or "Call Sam's cell phone" works fine 90% of the time.

I'm not sure though if you have created a custom field if it would work so well.
