Ok, so we have a MacBook, 2 iPad 2's, and 2 iPhone 4's .... Now, we have one user set up on the MacBook. Can we have multiple accounts on the iTunes to sync the iPhones and iPads? Or do we have to set up different users on the MacBook?

Both of us have our own accounts with iTunes to purchase our apps.

You'll find it much easier to manage those devices by simply adding another Mac OS user account to your Macbook. You can set up iTunes under each account with the correct logins so you won't have to keep switching accounts in iTunes all the time.
