The MacBook in question is a Mid 2009 model (before the one with the unibody). The drive options are either Intel 520 or something from OWC (120gig) that will have Lion (Mountain Lion when it's released). Would I even need to use TRIM on either of these drives?

P.S. I'm aware that these drives won't perform at their full possible speed in the older model MB due to he lack of SATA3.

TRIM isn't a hardware issue at the base machine level, it's an OS/drive support issue. Later versions of SL and Lion, yes, with a drive that supports it.
