I'm sorry for posting something that may be wrong, but I was told that airplay will still down convert 1080p video when streaming it to the new apple tv. I haven't been able to find a reliable answer in my searching so could someone please confirm or deny this for me?

Sorry I was a bit vague. I meant 1080p video from my Mac in iTunes.

Airplay support is planned for release with Mountain Lion, so none us will know the answer to your question until ML is available. We have to all wait and learn together.

No I don't mean AirPlay mirroring. I mean a 1080p movie in iTunes. I was told that AirPlay will down convert it to 720p even though the new apple tv supports 1080p.

AirPlay (not Mirroring) doesn't do anything to resolution, because that would mean real-time re-encoding. It just sends the already-compressed file over the air. If it's 1080p to begin with it'll stay at 1080p on the ATV3.

The poster above me is correct. Airplay from iTunes on your Mac has always been possible and does not require Mountain Lion. And when you Airplay from iTunes, the stream is not reencoded in any way. If you have the third generation ATV, it should play that 1080p Airplay stream as is. The second generation ATV will down convert the stream to 720p.

I rented a movie from iTunes last night and, at least according to my TV, it was playing at 1080p.

having discovered AirPlay mirroring an hour ago I think it's absolutely incredible. I'm using it to show a client a recently developed web site.

Even if you play a 480p video on your apple tv your tv will still say its in 1080p. Because the apple tv outputs 1080p to your tv ,it doesn't mean the content is.
