Is there an app that will allow me to view the activity on my iPad on my iPhone or vice versa. Maybe even with some control capabilities. I usually share my iPad with my girlfriend and it is sometimes inconvenient to share the same device. Thanks!!!!

Only via jailbreaking the device you want to show the screen of. BTW, wouldn't it be easier to use AirPlay to an AppleTV or a HDMI / VGA adapter, all with an external monitor?
I wanted it specifically for these devices. Ian aware of AirPlay and other apps that will let me view it on my iPad as an external monitor
Jailbreak, then, and install a VNC server on both.
