If you look up the department your gonna be in, I think there are a list of software you may need. Usually there is a general computer requirement with a list of software you need. Call the computer store at your college to ask what you may need. The only thing I can think of is Office and iWork and maybe toast.

You know how I feel when people say stuff like this
In addition of office 2004:
iWorks- Pages sucks but Keynote does some pretty awsome transitions that will "wow" your crowd
AppleWorks can help you out sometimes, I rarely use it but sometimes its good to have
Inspiration for making webs and outlines
Adobe photoshop, indesign, etc if you need it -it's pretty pricey though
Glider Pro- Fun yet stupid game (search on version tracker
I can't think of any thing else of the top of my head right now.

-Synergy. Once you use this, iTunes is never the same. (6.13)
-Meteorologist. Beats the crap out of the weather widget. (Free)
-OmniWeb. Just try it out, and you will never see Safari as satisfactory again. (30.00)
-Transmit. Great FTP app. (25.00)
-iPulse. Great system monitoring app. (13.00)
-iWork. Leaner than anything Microsoft makes, and satisfactory for doing everything but the most necessary steps. (50.00)
-OnyX. Keeps your system nice and clean. (Free)
-SuperDuper!. Great for backups. (20.00)
Those are my recommendations. Enjoy your Mac!!!

Im a first time switcher, and entering as a freshman in college as well..
I already got MS Office. I chose it because with my PB i wasnt impressed at all by iWork (didnt see much to offer). Since Im already familiar with Office I went with that.
Im also contemplating on getting Virtual PC, but Im going to goto college first and see if I even need a PC. My friends that are in college have told me some professors actually require you to have a PC to take their classes (study, quiz, etc)
As for web browsing I use Camino. Its completely free, brought to you by the good people of Mozilla and its definately the fastest browser I have yet to toy with. Still love FireFox though but Camino is definately a better browser.
