Add SSD, CCC old to new and install ok?

I've read through a number of threads on SSDs in the Mini but would appreciate advice since I am coming from a PC background.

I have a 2011 mid level Mini, an external sata dock and a shiny new Samsung 830 256GB SSD.
Does this process "hold water" as Cousin Vinny would say.

Insert SSD to sata dock connected by USB to Mini
Format the SSD with disk utility
Clone the current 500GB drive to the SSD using CCC
Install SSD to mini as second drive
Select SSD as boot drive, upon start up
Erase original HDD, keep a backup on separate external drive in case I mess up

Am I missing something here?
