Please forgive my primitive question but, is it safe to discuss personal info on my iPhone? (Carrier is AT&T, if needed)

So long as your personal conversations don't involve illegal activities, you're probably safe from the government eavesdropping on your conversations.

Location tracking via GPS is recorded - and sometimes that has benefits, i.e. missing/abducted people.
