I am subscribed to 2 podcasts and I want to keep all the episodes that come out. When i look on my itunes though it only shows the newest one that is updated... I have gone to settings and changed it to "keep all" but it still just shows the new ones. Whats up?

I dont get what you mean. Could you send a screenshot? (cmd-opt-4)
 
Did you try clicking the little triangle next to the podcast to show all the episodes for that podcast?
