I currently share a calendar with work collegue who has the power to edit, but he does not have access to my personal calendar; so, he sees certain days and times as "open" when in reality it is "busy". Is there a way within the calendar.app or an alternative to ensure that he knows when I truly am available without having to share my personal calendar deatils (e.g., medical, legal, family appts, etc.)?

Not to my knowledge. But maybe you can create events in your shared calendar that are called "Busy" and make them last the same time as your private real events.
