I updated via OTA and had MAJOR speed increases and stability improvements on my 4S. Should I clean install the new beta which might make the OS even more stable or should I just stay OTA?

I personally am only going to clean install the GM.
To do a clean install, plug it into iTunes and use the download in the developer portal.

That should be Shift (or option on mac) + click "Restore" not update. Update will just update the software, restore would be a clean install

As long as you have registered your UDID. If not do not restore, only update.

I'm going to do a clean install when I get home from work. For now I just did a few "reset all settings" "reset all network settings" after the OTA.

You can only install it as new (restore) if you are a registered developer, otherwise it will not work.

If you are not a developer then you can update only.

----------

Download the .ipsw from the dev center and shift + click update and choose the file.

That's the method to update, not clean install.
