i use dvd decrypter to rip the entire thing to my hard drive.

once you've got it decrypted there are tons of choices. i personally use nero recode because it's very simple, no unnecessary settings, and it encodes to quicktime-compatible mpeg 4. if only i could get it to not split movies every 700mb...
