I looked under shortcuts, but not there is no settings for Grayscale.
I was able to create before other shortcuts for Finder Services when I had the terminal command and Automator workflow. Probably if I knew the command to use in terminal to turn the Display Grayscale, it would be easy to do the workflow and shortcut.

But any other suggestions recommended, a menu bar checkbox to turn Grayscale would also be welcome to discover.
